PUMPKIN VEGAN PARMESAN CHEESE

We are starting this year with an easy and healthy recipe from our Ambassador, food blogger and a holistic nutritionist Catalina from @thefashionholistic. She is known for her unique and easy-to-make vegan recipes that are simply mouthwatering. She has been using MARPHYL Sea Salt for quite some time, integrating it in many of her dishes. Today, she presents Pumpkin Vegan Parmesan with MARPHYL Sea Salt.

Pumpkin Vegan Parmesan with MARPHYL Lime & Cayenne Sea Salt

  • 1/2 cup pumpkin seeds

  • 3 tbsp nutritional yeast

  • 1/2 tsp Lime & Cayenne MARPHYL Sea Salt

  • 1/4 tsp garlic powder

If you are using fresh pumpkin seeds you have to first dry them. Using a spoon, scrape the pulp and seeds out of your pumpkin into a bowl.
Separate the seeds from the stringy pulp, rinse the seeds in a colander under cold water, then shake dry.
Preheat the oven to 300 degrees F (150C). Spread the seeds in a single layer on an oiled baking sheet and roast 30 minutes to dry them out.
After the seeds are cool and dry, add all other ingredients into a food processor and process until desired texture (don’t overprocess!).
Enjoy this topping on any dish you like.

Pumpkin are not only tasty, they are also:

Benefits of nutritional yeast

Nutritional yeast (Saccharomyces cerevisiae) is the same type of yeast that’s used to bake bread and brew beer, but it is grown specifically to be used as a cooking ingredient. It has a cheesy, nutty or savory flavour. Its benefits include:

  • It is a complete protein. One tablespoon of nutritional yeast contains 2 g of protein, making it an easy way for vegans to add high-quality protein to meal.

  • It contains all nine essential amino acids that humans need to get from food.

  • One tablespoon of nutritional yeast contains 30–180% of the recommended daily value of B vitamins.

  • It contains powerful antioxidants such as glutathione and selenomethionine. They protect your cells from damage caused by free radicals and heavy metals and help your body eliminate environmental toxins.

A little bit about Catalina, in her own words.

Hi, I am Catalina and originally I am from Colombia. 7 years ago, I moved to Vancouver where I studied holistic nutrition.

Since I was a kid, I was interested in the topic of health. My father studied medicine, he was constantly reading and talking about the latest developments in the world of health and well-being. In our household, a lot of attention was paid to what we cooked and ate.

But when I moved to Canada, my eating habits changed, and not in a good way – I was not eating healthy and I was gaining weight. Being not happy with myself, I made a decision to change the situation. I got interested in holistic nutrition, which became my biggest passion.
